Chef's recommendations

Prepared from CAS certified pork marinated in a dozen carefully selected seasonings, the spare ribs are fried to a perfect golden color of incredible crispiness (thanks to the chef's superb control of temperature) to keep the exterior crispy and the interior soft so as to retain the fresh juices of the meat. Smothered with a special sauce prepared from more than 20 spices and seasoned with Cointreau, the dish's incredible sweet and sour aroma is guaranteed to awaken your appetite.

Made from carefully selected duck (over 2.25 kg) raised in Yilan, stuffed with a variety of herbs, the chef has to pay close attention to heat control throughout the 45 minute of roasting (with gentle heat) in order for the skin to achieve perfection in both color and crispiness. Our waiter will carefully slice off the skin from the flawlessly roasted duck and serve it in a chewy pancake, fresh spring onions cultivated in Sanhsing of Yilan and a special sauce prepared by our chef using more than a dozen of ingredients. The richness of flavor and crispiness of the duck skin is guaranteed to deliver the ultimate cuisine experience of  ''color, aroma and flavor'' that you will never forget.

Prepared from fresh crabmeat seasoned with a dozen of condiments complemented with a thick crab roe sauce that has been painstakingly prepared for hours. The crabmeat and sauce are cooked with other freshly caught seafood and it is one of the most recommended dish by our chefs.

Prepared with carefully selected premium shark's fin through several sophisticated processes (i.e. soaking, steaming, stewing and so forth), the dish requires 10 hours of preparation time. The shark's fin is then stewed in a soup stock brewed with Jinhua ham, old hen and pork that have been prepared for 8 hours in order to create a layered texture and incredible freshness for the soup. Prepared by chefs with decades of experience, the dish is made from the essence of the soup stock to achieve its exceptional flavors.

With a stock brewed with Jinhua ham, old hen and pork for 8 hours to achieve its incredibly sweet and fresh flavors; prepared with premium whole Chile abalone braised in the carefully prepared soup stock for 4-5 hours for the abalone to absorb the essence of the soup. The abalone is then removed and smothered in secret sauces prepared by the chef to achieve its marvelous flavors.
